Ingredients:
1 ½ cups rolled oats
½ cup all-purpose flour
¼ cup brown sugar
¼ cup white sugar
½ teaspoon baking soda
¼ teaspoon salt
½ cup melted coconut oil or vegetable oil
2 tablespoons maple syrup or agave nectar
1 teaspoon vanilla extract
¼ cup chocolate chips (optional)
¼ cup chopped nuts (optional)
Instructions:
1. Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
2. In a large mixing bowl, combine the rolled oats, all-purpose flour, brown sugar, white sugar, baking soda, and salt. Mix well.
3. Add the melted coconut oil or vegetable oil, maple syrup or agave nectar, and vanilla extract to the dry ingredients. Stir until the mixture is well combined and forms a dough.
4. If desired, fold in the chocolate chips and chopped nuts.
5. Take about 1 tablespoon of dough at a time and roll it into a ball. Place the dough balls onto the prepared baking sheet, leaving some space between them as they will spread while baking. Flatten each dough ball slightly with the back of a spoon.
6. Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are golden brown.
7. Remove the baking sheet from the oven and let the cookies cool on the sheet for a few minutes before transferring them to a wire rack to cool completely.
